Style: |
A sophisticated, cool climate merlot, sourced from our estate grown Eden Valley vineyards. This wine has been matured in (300L) hogshead barrels for 18 months. Predominantly older oak, but a few barrels of lightly toasted new French oak have been used to add freshness, complexity and length. The gentle tannin structure and generous fruit of this wine pairs well with “mid weight” meats, like duck, turkey or a fillet steak. Dishes like mushroom gnocchi or a caramelized onion tart would also pair well. From a cheese point of view, many lighter flavoured goat or sheep cheeses would be a good match. This wine is drinking well now but will develop and express nicely with a bit of age – four to eight years. |

Cellaring Potential: |
Drink now but will age gracefully over the next 4 to 8 years. |
