Spring Hill Riesling: Crisp, Fresh, and Aromatic
Our Eden Valley Riesling is a vibrant and refreshing wine with an aromatic profile. On the nose, it delights with lemon blossom and mineral notes, accented by lime zest and lemon pith for a punch of citrus. The palate offers a juicy core of citrus flavours, balanced with a light texture and fresh acidity. Floral and mineral layers add complexity, and the long finish leaves you wanting more.

The 2024 Spring Hill Pinot Gris offers a fruit-driven palate with layers of fresh pear and lemon zest. On the nose, it opens with Nashi pear, lemon blossom, and honeysuckle, underpinned by a fine talc minerality. This Pinot Gris is fleshy and generous, with delicate mineral notes and floral accents adding depth and complexity. The light acidity and subtle texture make it both versatile and easy-drinking.
A medium-bodied, dry white, this Pinot Gris is ideal for pairing with Asian-style dishes or any light, fresh cuisine. It’s also the perfect choice for a lazy Sunday afternoon, enjoyed on its own.
Altitude Chardonnay: Elegant and Complex
Our Eden Valley Chardonnay brings a balanced combination of stone fruit and toast, with a nose of peach, toasted brioche, and light smoky notes. Chalky minerality adds brightness and frames the fruit beautifully. On the palate, the wine evolves with preserved lemon and soft mineral tones, supported by a gentle acidity that carries through to an elegant finish.
Aged for 8 months in French oak, the lightly toasted oak complements the wine’s structure without overpowering the fruit.
This medium-bodied Chardonnay pairs wonderfully with full-flavoured fish dishes, as well as lightly seasoned pork and poultry. A mild, soft cheese would also be a lovely match, or enjoy it as an aperitif.
